Peppermint Fudge Holiday Cookies You Will Love

The holidays always are a fun time to bring the kids into the kitchen and carry out family traditions. This recipe is a new holiday cookie recipe we learned about from a Chicago friend.  I made them and everyone loved them!  So try them it's fun, easy, and a very special holiday cookie to put out this holiday season. 

 




PEPPERMINT FUDGE COOKIE SANDWICHES


1/4 c butter
1/2 c sugar
1 egg
3/4 semi-sweet chocolate morsels
3/4 c flour
2 crushed candy canes
1/4 c white chocolate morsels
10-12 peppermint patties

1. Preheat to 375. Line cookie sheet w/ parchment. Microwave swmi sweet chocolate morsels and butter on high 60 seconds,stirring after each 20 second interval. Add sugar and egg to bowl. Mix until l blended. Add flour and mix until all dry ingredients are mixed. Using a small scoop, drop level scoops of batter onto pan. Bake 10 min or until edges done.

2. Prepare white chocolate for melting in microwave and have crushed candy canes and peppermint patties ready. Prepare but do not microwave yet!

3. Remove cookie pan from oven. Immediately turn half of the cookies over and top with peppermint patty and remaining cookies to form sandwiches.

4. Put Candy Canes in plastic bag and smash with meat tenderizer hammer or similar kitchen tool.

5. While the hot cookies and patties are molding and cooling, melt white chocolate morsels for 30 secs. or until smooth. You will use this chocolate for drizzling. Inverted a plastic baggie over your hand, scooping the melted white chocolate into the inverted baggie, turn baggie right side out, the twist tightly with tie, then snip a little corner off the baggie to use as a piping bag. Squeeze the baggie and use for piping white chocolate over cookie sandwiches.  Immediately sprinkle with crushed candy canes.  Place on serving platter.

Serve warm or cold both ways they are marvelous!
